I'll show you a quick and easy side dish using fresh Squash. What's your favorite way to eat Squash?
Ingredients
10 fresh whole yellow summer squash (smooth-skinned, straight or crookneck)
½ onion, cut up thin slices
4 tablespoons butter
1 teaspoon of salt
1 teaspoon of salt
Directions
Rinse off squash, cut off the ends, and slice the squash ¼ - ½ inch thick.
Cut a half of onion into thin slices.
In a 6 quart stockpot add squash, onion, butter, water, salt, and pepper.
Bring to a boil to start with lid cracked. Boil for 3-4 minutes.
Reduce heat to medium-low and simmer for 20-30 minutes till fork tender not mushy over-cooked.
Enjoy with some of Aunt Sandy's cornbread.
