Southern cornbread dressing is delicious and tasty anytime. Aunt Sandy uses homemade cornbread and fresh celery along with traditional seasonings like Sage and Poultry Season.

Make your cornbread (see link below) let it cool completely.
Preheat oven 350ºF.
Spray 13 x 9 x 2 inch pan with cooking spray.
Saute celery & onion in ½ stick of butter (can use a microwave) until tender let it cool.
Crumble up cornbread in a large bowl.
Add celery, onions, salt, pepper, Sage, Poultry Seasoning, 1 carton of broth, remaining butter, and eggs. Taste seasoning before adding eggs.
Mix well. Mixture should moist but not runny. Add the remaining broth as needed.
Pour mixture into greased pan.
Cover with aluminum foil.
Bake for a hour: 30 minutes covered and 30 minutes uncovered until top is golden brown, firm, and a cake tester (sharp knife or toothpick) inserted in center comes out clean.
