Best Roast (Crockpot) & Mashed Potatoes

Roast and mashed potatoes makes a delicious and satisfying meal. Roast cooked in a crockpot is so tender and flavorful and a real time saver. Fresh homemade mashed potatoes is the perfect match to roast especially with a pool of delicious gravy swimming in the middle.

Roast Ingredients

• 1 roast (2 lbs. in video)
• 1 onion, cut up
• 2 cans cream of mushroom soup
• 1 package onion soup mix

Mashed Potatoes Ingredients

• 5-6 Potatoes (Yukon Golds or Russets potatoes have a higher starch content making a fluffier mash. Reds will work if that is all you got.)
• ½ cup of Milk
• 3 tbsp butter, melted
• Salt and pepper

Roast Directions

1. Preheat crockpot on heat.
2. Brown roast on all sides (Browning [caramelizing] or searing beef produces the rich, deep color, flavours, and aromas.)
3. Mix soup, soup mix, and water together.
4. Add onion to mixture.
5. After roast is browned on all sides put in crock pot.
6. Pour mixture over roast.
7. Cook on high for 3-4 hours. (Cooking time will depend on size of roast.)

Mashed Potatoes Directions

1. Rinse off potatoes.
2. Peel and cut up potatoes.
3. Rinse off potatoes.
4. Place potatoes in a pot.
5. Cover potatoes with cold water to start so they will cook evenly.
6. Add salt to water.
7. Bring pot to a boil.
8. Cook for 20 minutes or till fork tender.
9. After cooking time is complete, drain potatoes in colander.
10. Place potatoes back in pot.
11. Add melted butter to milk, and pour over potatoes.
12. Mash potatoes with a masher or use an electric mixer for creamed potatoes.
13. Salt & pepper to taste.
