Aunt Sandy's Famous Chicken & Dressing

Southern cornbread dressing is delicious and tasty by itself. Why not kick it a notch by adding chicken and make it a meal. Aunt Sandy uses homemade cornbread and fresh veggie along with traditional Southern seasonings to make this family favorite. This dish is good all year long.

Ingredients

• 1 pan of cornbread baked and cool
• 4 celery stalks, finely chopped (not mushy)
• 1½ onions, finely chopped (not mushy)
• 1½ sticks butter
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp pepper
• 1 tsp salt
• 2 tsp Sage (I ususally use 1-2 tbsp)
• 2 tsp Poultry Seasoning
• 3 eggs lightly beaten
• 1½ cartons (32 ounce per carton) chicken broth
• 2 cooked chicken breasts (or substitute rotisserie or can chicken)

Directions

1. Cook chicken until done. Let cool then de-bone and cut up chicken.
2. Make your cornbread (see link below) let it cool completely.
3. Preheat oven 350ºF.
4. Spray 13 x 9 x 2 inch pan with cooking spray.
5. Saute celery & onion in ½ stick of butter (can use a microwave) until tender let it cool.
6. Crumble up cornbread in a large bowl.
7. Add celery, onions, salt, pepper, Sage, Poultry Seasoning, 1 carton of broth, remaining butter, and eggs. Taste seasoning before adding eggs.
8. Mix well. Mixture should moist but not runny. Add the remaining broth as needed.
9. Add half of cut up chicken at a time. Mix well. More stock maybe needed.
10. Add the other half of cut up chicken. Mix well. More stock maybe needed.
11. If you need chicken and dressing for a large group or take a serving to someone double the recipe. That is what I did in this video.
12. Pour mixture into greased pan.
13. Cover with aluminum foil.
14. Bake for a hour: 30 minutes covered and 30 minutes uncovered until top is golden brown, firm, and a cake tester (sharp knife or toothpick) inserted in center comes out clean.
