Cake Ingredients

• ½ cup (1 stick) butter
• ½ cup shortening (Crisco)
• 2 cups sugar
• 5 egg yolks
• 2 cups plain flour
• 1 teaspoon baking soda
• 1 cup buttermilk
• 2 teaspoon vanilla
• 1 cup coconut
• 1 cup chopped pecans
• 5 egg whites stiffly beaten

Frosting Ingredients

• 1 package (8oz) cream cheese soften
• ½ cup (1 stick) butter
• 1 teaspoon vanilla
• 1 box (16oz.) powdered sugar
• ½ cup pecans, finely chopped

Cake Directions

1. Preheat oven to 350°F / 177°C.
2. Grease and Flour three 8-inch or two 9-inch cake pans.
3. Combine butter and shortening.
4. Add sugar and blend until mixture is smooth.
5. Add egg yolks 1 at a time and blend well.
6. Combine flour and baking soda and add to blended mixture alternately with buttermilk.
7. Mix in vanilla.
8. Mix in coconut.
9. Mix in nuts.
10. Fold in previously beaten egg whites with stiff peak a little at a time.
11. Pour equal portions into each greased and floured cake pans. Level each cake pan.
12. Bake at 350°F / 177°C for 23-28 minutes or until toothpick inserted in center comes out clean.
13. Cool cakes in pan on wire rack 15 minutes.
14. Remove cakes from pan and cool completely before frosting.

Frosting Directions

1. Beat cream cheese and butter until smooth.
2. Add vanilla and blend until smooth.
3. Add powdered sugar and mix well.
4. Add nuts.
5. *If frosting too thick add a little milk to thin the frosting.
6. *If frosting too thin add a little powdered sugar to thicken the frosting.
7. Place a dollop of frosting in center of cake plate.
8. Place first cake layer in the center of cake plate.
9. Frost the top only of the first layer.
10. Place second cake layer centered on the first cake layer.
11. Frost the top only of the second layer.
12. Place third cake layer centered on the second cake layer.
13. Frost the top of the third layer and sides of all layers.
