Irresistible Butterscotch Cheese Crunchers

Butterscotch Cheese Crunchers are cream cheese bars with a crunchy crust with a hint of rich sweet butterscotch - like holding a piece of cheesecake in your hand. They are a lightweight crunchy treat good for dessert, appetizer or a sweet treat. Satisfy your cheesecake craving with something that is not as rich as a full slice of cheesecake. Irresistible Crunchers!

Ingredients

• 6 tablespoons butter
• 1 package (12 ounce - 2 cups minimum) butterscotch flavored morsels
• 2 cups gram cracker crumbs
• 2 cups chopped nuts
• 2 packages (8 ounce each) of cream cheese softened
• ½ cup sugar
• 4 eggs
• ¼ cup unsifted flour
• 2 tablespoons lemon juice

Instructions

1. Preheat oven 350°F (177°C).
2. Double boiler: don't overfill the water shouldn't touch the bottom of the top pot; fill 1-2 inches.
3. Combined over hot (not boiling) water butterscotch morsels and butter.
4. Heat until melted and smooth.
5. Use 15 x 10 x 1 inch nonstick metal cookie sheet ungreased.
6. Transfer butterscotch mixture to a large bowl. Stir in graham cracker crumbs and nuts with a fork until mixture forms small crumbs.
7. Reserve 2 cups of crumb mixture for topping.
8. Press remaining mixture into 15x10x1 ungreased baking pan.
9. Bake at 350° (177°C) for 12 minutes. While crust is baking continue making second layer.
10. In large bowl, combine cream cheese and sugar beating until creamy.
11. In measuring cup, combine flour and lemon juice.
12. Blend in flour and lemon juice mixture into cream cheese mixture.
13. Pour evenly over hot baked crust.
14. Sprinkle with reserve crumb mixture.
15. Bake at 350°F (177°C) for 25 minutes.
16. Cool completely to room temperature.
17. Chill in refrigerator.
18. Cut into into bars or squares.
