Strawberry Bread with Simple Glaze

I tried Preppy Kitchen's Strawberry Bread and it is delicious! Took it to small group and gave a loaf to a friend. They both loved it. I know strawberries are now out of season but this is worth trying. Also check out my other Bread recipes in the playlist below.

Bread Ingredients

• 1½ cups diced strawberries
• ½ cup milk
• 1½ teaspoon vanilla extract (subtitute - almond extract)
• 1 large egg, beaten
• ½ cup oil
• ¾ cup granulated sugar
• 2 cups all-purpose flour
• 2 tablespoons all-purpose flour (for coating strawberries)
• 2 teaspoons baking powder
• ¼ teaspoon salt

Glaze Ingredients

• 1 cup powdered sugar
• 1 teaspoon milk
• 3 tablespoons strawberries, mashed

Bread Directions

1. Move oven rack to lower position so that tops of pans will be in center of oven.
2. Preheat oven to 350°F (176.667°C).
3. Spray a 9 x 5 -inch pan with cooking spray.
4. Add sugar, milk, oil, egg, and vanilla to a medium mixing bowl and whisk together.
5. In a second medium mixing bowl, stir together flour (2 cups), baking powder, and salt.
6. Add the dry mixture to the wet mixture and stir to combine - don't over stir.
7. In a third small mixing bowl, combine strawberries and flour (2 tablespoons), tossing strawberries to coat with flour (This will help the strawberries from sinking to the bottom of the pan).
8. Fold the flour coated strawberries into the batter.
9. Pour bread batter into the sprayed pan.
10. Bake at 350°F (177°C) for 55 - 60 minutes or till cake tester inserted in center comes out clean.
11. Leave the bread in the pan to cool for 10 minutes.
12. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack.
13. Remove the bread from the pan and cool completely (about 1-2 hours) on a wire rack before applying glaze.

Glaze Directions

1. In a small bowl, place the strawberries and mash.
2. Stir into mash strawberries powdered sugar and milk.
3. After the bread has completely cooled, spoon glaze over bread.
4. Let the glaze set about 30 minutes before serving.
